Our Cuisine
Nusantara — the ancient name for the Indonesian archipelago — is home to one of the world's most complex culinary traditions. Thousands of islands, hundreds of ethnic groups, centuries of spice trade with India, Arabia, China and Europe have produced a cuisine of extraordinary depth.
Fusion Nusantara is our way of honouring that tradition while bringing it into conversation with global technique. The fish on your plate may have been caught that morning in the waters you can see from your table. The sambal was made this morning. The coconut was picked from trees at the edge of the property.
The Setting
Our restaurant sits on a natural limestone cliff above Bara Beach. The open-air terrace looks directly onto the Celebes Sea — on clear days you can see Liukang Loe Island. As afternoon moves toward evening, the light turns the water from turquoise to gold. Arrive before sunset. The last hour of light is something guests remember long after they leave Bira.

Tiger prawns from the Celebes Sea, wok-tossed in chilli, galangal and turmeric paste with coconut cream. Served on banana leaf with steamed rice and house acar.
Dessert
The beloved Makassar street snack — pressed banana with palm sugar — reimagined as a no-bake cheesecake on a coconut biscuit base with gula aren caramel.
